Chipotle Chili Lime Salsa
Ingredients:
- 2.5 cups roma tomatoes, chopped (about 5-6 tomatoes)
- 1/2 cup yellow onion, diced (1 small onion)
- 1/4 cup green bell pepper, diced (about 1/4 pepper)
- 2.5 Tablespoons jalapenos, finely diced (about 1-2 peppers) *remove seeds if you don't want it really hot!
- 1 teaspoon garlic, grated (about 4 cloves)
- 1 tablespoon cilantro, finely chopped
- 3/4 teaspoon salt
- 1.5 teaspoons sugar
- 1/2 teaspoon chipotle chili powder (also may be called ancho chili powder)
- 1/8 teaspoon ground cumin
- 1 tablespoon white vinegar
- juice of 1 lime
Instructions:
1. Put all ingredients in blender and use chop setting to blend to
desired consistency. This will not be a chunky salsa.
