Brittany's Beef Chili


Ingredients:
  • 1 lb ground beef
  • ½ green bell pepper, diced
  • ½ large or 1 small yellow onion, diced
  • 4 cloves garlic, minced
  • 2 serrano peppers, finely diced (if you don’t like it too spicy, you can substitute for ½ teaspoon cayenne pepper)
  • 1- 15 oz. can diced tomatoes
  • 1- 15 oz. can kidney beans
  • 1- 15 0z. can S & W Chili Beans
  • 1.5 teaspoons cumin
  • 2.5 Tablespoons chili powder
  • 1 Tablespoon sugar
  • 2 Tablespoons olive oil
  • salt and pepper to taste

Instructions:

1. Add olive oil to large pot and add ground beef, bell pepper, onion, garlic, serranos, 1/2 teaspoon cumin, and 1 teaspoon chili powder. Cook over medium high heat until the ground beef is completely browned.

2. Add tomatoes, beans, sugar, 1 teaspoon cumin, and 1.5 Tablespoons chili powder and stir to combine.

3. Add salt and pepper to taste and cook over medium heat for 30 to 40 minutes until beans are soft and beef is tender.

*Serve with cheddar cheese, sour cream and either tortilla chips or corn bread.

Pumpkin Turkey Chili


Ingredients:



  • 1 lb ground turkey
  • 1 poblano pepper, seeded and diced
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 habanero peppers, seeded and diced
  • 1- 15 oz. can black beans, drained and rinsed
  • 1- 15 oz. can fire roasted diced tomatoes
  • ½ Cup canned pumpkin puree (not pumpkin pie filling)
  • 1 Tablespoon chili powder
  • 1 teaspoon cumin
  • 2 Tablespoons olive oil


Instructions:

1. Add olive oil to large pot and add ground turkey, poblano pepper, onion, garlic, habaneros, 1 teaspoon chili powder and ½ teaspoon cumin. Cook over medium high heat until the ground turkey is completely browned.

2. Add tomatoes, beans, 2 teaspoons chili powder, and ½ teaspoon cumin and stir to combine.

3. Add salt and pepper to taste and cook over medium heat for 30 to 40 minutes until beans are soft and turkey is tender. (You may add more pumpkin if you really want a strong pumpkin flavor and if it gets too thick you can always add some water or chicken broth to thin it out)

*Serve with chopped cilantro, avocado, sour cream, and tortilla chips for topping
