Ingredients:
Filling:
- 5 Cups cortland (or other good baking) apples, about 5 apples
- ⅓ Cup granulated sugar
- 1 Tablespoon cornstarch
- 2 Tablespoons lemon juice
- ½ teaspoon cinnamon
- pinch of ground nutmeg
Topping:
- ½ Cup quinoa flakes
- ½ Cup brown sugar, packed
- ¼ Cup gluten free all purpose flour
- ¼ teaspoon xanthan gum
- ½ teaspoon cinnamon
- pinch of ground nutmeg
- ⅓ Cup butter, softened
Instructions:
1. Preheat oven to 350 degrees and grease 8x8 glass baking dish.
2. Peel and slice apples about ¼ inch thick and put in a large bowl.
3. In a small bowl combine all other filling ingredients, then pour the mixture over the apples and stir until all the apples are coated.
4. In a medium sized bowl or a stand mixer combine all topping ingredients except the butter. Then add the butter and work in with a fork or use the paddle attachment on the mixer until the mixture resembles a crumble with small chunks of butter.
5. Bake 35 minutes or until filling is bubbling and topping is golden brown. (if using a dark pan decrease the cooking time as much as 10 minutes)
*Serve hot with a scoop of vanilla ice cream.
