Ingredients:
- 1 lb ground turkey
- 1 poblano pepper, seeded and diced
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 2 habanero peppers, seeded and diced
- 1- 15 oz. can black beans, drained and rinsed
- 1- 15 oz. can fire roasted diced tomatoes
- ½ Cup canned pumpkin puree (not pumpkin pie filling)
- 1 Tablespoon chili powder
- 1 teaspoon cumin
- 2 Tablespoons olive oil
Instructions:
1. Add olive oil to large pot and add ground turkey, poblano pepper, onion, garlic, habaneros, 1 teaspoon chili powder and ½ teaspoon cumin. Cook over medium high heat until the ground turkey is completely browned.
2. Add tomatoes, beans, 2 teaspoons chili powder, and ½ teaspoon cumin and stir to combine.
3. Add salt and pepper to taste and cook over medium heat for 30 to 40 minutes until beans are soft and turkey is tender. (You may add more pumpkin if you really want a strong pumpkin flavor and if it gets too thick you can always add some water or chicken broth to thin it out)
*Serve with chopped cilantro, avocado, sour cream, and tortilla chips for topping
