Chipotle Chili Lime Salsa
Ingredients:
2.5 cups Roma tomatoes, chopped (about 5-6 tomatoes)
1/2 cup yellow onion, diced (1 small onion)
1/4 cup green bell pepper, diced (about 1/4 pepper)
2.5 Tablespoons jalapeño, finely diced (about 1-2 peppers) *
remove seeds if you don't want it really hot!
1 teaspoon garlic, grated (about 4 cloves)
1 tablespoon cilantro, finely chopped
3/4 teaspoon salt
1.5 teaspoons sugar
1/2 teaspoon chipotle chili powder (also may be called ancho chili powder)
1/8 teaspoon ground cumin
1 tablespoon white vinegar
juice of 1 lime
1. Put all ingredients in blender and use chop setting to blend to

Brittany's Beef Chili
Brittany's Beef Chili
Ingredients:
- 1 lb ground beef
- ½ green bell pepper, diced
- ½ large or 1 small yellow onion, diced
- 4 cloves garlic, minced
- 2 sarrano peppers, finely diced (if you don’t like it too spicy, you can substitute for ½ teaspoon cayenne pepper)
- 1- 15 oz. can diced tomatoes
- 1- 15 oz. can kidney beans
- 1- 15 0z. can S & W Chili Beans
- 1.5 teaspoons cumin
- 2.5 Tablespoons chili powder
- 1 Tablespoon sugar
- 2 Tablespoons olive oil
- salt and pepper to taste
Instructions:
1. Add olive oil to large pot and add ground beef, bell pepper, onion, garlic, sarranos, 1/2 teaspoon cumin, and 1 teaspoon chili powder. Cook over medium high heat until the ground beef is completely browned.
2. Add tomatoes, beans, sugar, 1 teaspoon cumin, and 1.5 Tablespoons chili powder and stir to combine.
3. Add salt and pepper to taste and cook over medium heat for 30 to 40 minutes until beans are soft and beef is tender.
*Serve with cheddar cheese, sour cream and either tortilla chips or corn bread.
